Program Highlights

A true four-phase, year-long progression, Orientation, Kitchen Operations, Menu & Prep Creation, then Banquet Execution. Each phase deliberately builds on the last, not a repetitive rotation.
Trainees get real creative ownership: developing specialty menu items, testing new recipes, and learning menu pricing and food costing hands-on, directly alongside the Executive Chef himself.
By the final phase, trainees read and interpret live banquet event orders, then lead prep and plating for real guest events, genuine client-facing responsibility, not repetitive back-of-house prep.
Every phase includes weekly one-on-one evaluations with a named, credentialed supervisor, structured, continuous mentorship and feedback all year long, not vague or occasional check-ins.
Mentorship from an Executive Chef whose own career path mirrors the trainee's journey: from Jamaica, through hospitality school, to relocating and rising to run this very kitchen.
