In Costa Rica, the relationships between food systems, ecology, and conservation are heavily integrated into the country’s long-term strategy for sustainability. Spend your summer studying two of the world’s most popular crops, coffee and chocolate, as case studies for how these relationships have the potential to restore biodiversity and combat climate change. Learn about the sociocultural histories of coffee and cacao, from indigenous peoples’ usage to modern production and exports, and see how others can follow Costa Rica’s example of sustainability. SFS students live and study at the Center for Sustainable Development Studies. Program Highlights
Visit an agroforestry cocoa system, where you’ll get hands on with local methods of chocolate production and processing.
Visit El Toledo Coffee farm to learn about environmentally sound methods of coffee production and discuss the history and impacts of chocolate and coffee production in Latin America.
Engage in the Center’s sustainable food efforts – gather fresh mangoes from campus trees, visit the chicken coop to gather eggs, harvest kale from the garden, master composting, and more.
Visit coffee farms, cacao plantations, other agroecosystems and farms, agrotourism businesses, and the forests and rainforest ecosystems around agricultural areas.
Visit a chocolate farm, where you’ll learn about local methods of chocolate production and processing.
