Mediterranean Nutrition, Public Health & Ethical Food System
Program Overview
The Mediterranean diet is one of the world’s most recognized dietary patterns, yet its connections to food systems, sustainability, community health, and social conditions extend far beyond nutrition alone.
This interdisciplinary, field-based course examines Mediterranean nutrition as a framework for disease prevention and community health. Students explore how food production, access, community networks, labor conditions, and environmental factors shape health outcomes, while considering sustainability, refugee nutrition, and ethical food systems.
Greece serves as a living learning environment where Mediterranean food traditions, local production, and contemporary public health challenges intersect. The course combines workshops, field laboratories, and community engagement, with field learning in Aegina, Delphi and Hosios Loukas, Sparta, and Monemvasia, connecting academic knowledge with real-world food systems and public health.
Developed and delivered by the Hellenic Center for Interdisciplinary Studies and Research (HCISR) in Greece, the program provides U.S. academic credit through Arcadia University, which serves as the School of Record.
