Program Overview
The Exotic Culinary Arts is a four-week culinary short course at PIB College in Tabanan, Bali, taught and examined in English and worth up to 10 ECTS. Students cook more than thirty dishes by hand across four modules: Asian food, ingredients and nutrition; Indonesian culinary heritage; the exotic Asian module spanning Korean, Japanese, Vietnamese, Thai, Chinese, Singaporean and Indian kitchens; and Indonesian pastry and sweets.
A fifth module on kitchen management and business planning runs throughout. Teaching takes place in a professional kitchen and pastry lab with internationally trained chefs, alongside excursions to a dawn market, the Jatiluwih rice terraces and a cacao plantation.
The course can also be booked by the week.
