Learn kaiseki in JCI this year.

Kaiseki Ryori is a Japanese party course menu. 
There are two Kaiseki ryori in Japan: 会席 and 懐石 (both reads "Kaiseki").
会席料理 is usually matched with Japanese sake and is a full course menu for parties.
Meanwhile, 懐石料理 is a small meal at the tea party.
In JCI, you will learn to make 会席料理.

There is no specific menu for Kaiseki Ryori, so eventually, you will be able to make your original menu using your knowledge.
In Kaiseki Ryori, you use seasonal (= 旬 "Shunn") ingredients, so depending on the season you choose to take the class, the menu will completely change.
