    The city of Oaxaca is the gastronomic capital of the state. Oaxacan cuisine is a fascinating hybrid of its Spanish history and indigenous roots. From rich moles to freshly ground masa, from markets redolent of spices and chiles to restaurants that glorify the past and future of the local cuisine, Oaxaca is a feast for the senses. Oaxacan cooking from its plainest to its richest is truly the cooking of the people.

    This program is geared towards students studying Culinary Arts and Hospitality Management, or those who love to cook. "A Taste of Oaxaca" will focus on hands-on cooking classes which explore the fabulous food of Oaxaca. From basics like grinding corn to make tortillas and tamales to learning about how young chefs are taking the the local foods and turning them into gourmet dishes you might see in a four star restaurant, this program will be a feast for all the senses.

  • Highlights

    Hands-on cooking classes will focus on:
    * Corn grinding and fresh masa: Making tamales, tortillas and tlayudas
    * Chiles: learn about the many varieties, both fresh and dried, and how to use them in salsa or how to cook and stuff them
    * Moles: Learn to make some of the famous Oaxacan moles (sauces) such as: Black (Mole Negro), Red (Mole Rojo), Green (Mole Verde) and Yellow (Mole Amarillo, as well as speciality moles
    * Learn how to make Oaxaca breads and pastries from a local Baker.
    * Make visits to local food markets with local guides and learn what to look for when purchasing the ingredients for a Oaxaca feast.
    * Take a field trip to Real Minero Mezcal, and learn how the locals make the potent drink known as "mescal" from the planting of the agave plant to the distilling process. The locals have a saying, "Por todo mal, mezcal, y por todo bien, tambien". (For everything bad, mescal, and for everything good as well.)
